Mom’s Jam Cookies

These delicious cookies are very close to my heart. They are my mom’s special recipe, which I always remember her making around Christmas time, along with many other cookies. With time, however, these cookies started being made all year round, because they are just too delicious to eat only once a year!

Here are the ingredients:

  • 500gr Flour
  • 250gr Sugar
  • 250gr Butter
  • 6 Egg Yolks
  • Pinch of salt
  • Lemon zest
  • Jam of Choice

Start by putting all the ingredients, flour, sugar, butter (cold), the 6 egg yolks, thhe lemon zest and the pinch of salt together in a bowl and mix until amalgamated (not too long, the butter needs to stay cold). Once the dough is compact roll it into a ball, cover it with foil and let it rest in the fridge for at least an hour.

After that, you can take the dough out of the fridge and roll it out. The idea is to make sandwich cookies, so you need to cut out an equal number of tops and bottoms (the top consisting in a cookie of the same shape, but with a smaller shape cut in the middle, so you can see the jam). Bake the cookies in the oven for about 10 minutes at 200C. While they are cooling, you can prepare the jam, by heating it up and pouring it through a strainer to make sure it’s smooth. Add one spoon of jam on each bottom and add the top on it right after. You can decorate them with powder sugar or royal icing to make them extra pretty.
