It’s summer! That means it’s time to look for some refreshing yet delicious desserts that we can enjoy with warmer temperatures (if you are lucky enough to live in a country where it is actually summer.) During the summer I love everything lemon, so here is the recipe to make some delicious lemon bars.
Here is the list of ingredients for the crust:
- 1 Cup (230g) Unsalted melted Butter
- 1/2 Cup (100g) Granulated Sugar
- 2 teaspoons Vanilla Extract
- 1/2 teaspoon salt
- 2 Cups + 2 tablespoons (265g) all-purpose flour
Here are the ingredients for the lemon filling:
- 2 Cups (400g) Granulated Sugar
- 6 Tablespoons (48g) all-purpose flour
- 6 large eggs
- 1 Cup (240ml) freshly squeezed lemon juice (more or less 4/5 lemons)
- lemon zest from 1 or 2 lemons
Preheat your oven at 160C (325F) and start preparing the base of your lemon bars. Mix the melted butter, sugar, vanilla extract and salt in a bowl. Then add the flour and combine until you get a thick dough. Press it firmly into a glass or ceramic pan (covered with parchment paper) and bake it for 18-20 minutes. It will not be completely baked by the end of is but the edges should be slightly golden.
In the meantime, start preparing the lemon filling. Wisk the eggs in a bowl until you get a yellow mixture. Then add the sugar and sifted flour. Mixed it until combined and add the lemon juice. When your mixture is combined add the lemon zest. Take the crust out of the oven and pour the lemon mixture on it. Bake the bars for 22-26 minutes (depending on your oven.) It will be ready when the mixture just slightly jiggles once you move the pan with an oven mitten. Make sure you don’t overbake your bars.
After you take the pan out of the oven, let it rest until it cools down and then put it in the fridge for at least 2 hours before cutting it into bars. Enjoy with some powder sugar on the top.
